It's a sure bet that most people who have had elderberry syrup have been told they're unsafe to have raw. And this is true...if you are going to have large amounts.
But here's what you should know...Boiling kills so much of the elderberry’s power. The beneficial properties that are so revered are destroyed at a relatively low temperature. In fact, polyphenols and proanthocyanins begin to degrade at temperatures over 77*F and vitamin C immediately degrades by about 15-20% once it reaches just 86*F.Once extraction temperatures are over 122*F for proanthocyanins and polyphenols and 140*F for vitamin C, there is so much degradation that you can be pretty sure all benefits from them are lost.
"But the boiled syrup I take works so well!" Yes...yes it would still 'work', though not because of the elderberries, it's in spite of them being boiled. All the other ingredients are not just flavours - the cinnamon/cloves/thyme, etc are all rammed full of nutrients that support a healthy immune system.
But wouldn't it be wonderful to have the benefits of those herbs and spices AND to retain the nutrients in the elderberries?Did you know that every single study on the benefits of Elderberries is done on elderberry *extract* & never the boiled berry?!We have tried and tested our products over the years and have found that a raw extraction, taken in much smaller amounts, is both highly beneficial (and we have found it to be much more potent) and still completely safe!
